Pork with Sauerkraut

I wanted to use my Russian..Polish..German cookbook tonight and I picked a Bulgaria dish. Pork with sauerkraut is what I made tonight and it really turned out DELICIOUS to my surprise :) Every week doing this blog about ethnic cooking is really FUN!!! Pork and Sauerkraut (Bulgaria recipe)
INGREDIENTS
  • 1 lb lean pork
  • 4 tbsp olive oil
  • 2 garlic cloves crushed
  • 1/2 small onion chopped
  • 1/4 cup wine
  • 1/2 tsp paprika
  • 14 oz bag shredded sauerkraut
  • 1 tsp red ground pepper
  • 6 tbsp beef stock
  • salt and pepper to taste
  • 1/4 cup sour cream
  • 1/4 cup coarse grain mustard
  • paprika to garnish



Cut pork into cubes and place in olive oil


brown the meat on both sides




in a larger cooking pan add olive oil and onions with garlic... let saute



add in the wine





let simmer for a minute






add the browned pork to this pan







get the sauerkraut








make sure to wash and drain it well









add the beef stock to the pan










then add the paprika and the red ground pepper... put a tight lid on it and let cook on low heat for 1 hour.... every now and then stir so to not burn the bottom.












This is what it should look like when done... YUMMY!!!











I just used regular french bread and butter and wrapped in foil.. then put it in a 350 degree oven until warmed














This is the brand of coarse grain mustard I had used













This mustard and sour cream with paprika can be used on the side or on top of the pork and sauerkraut















Here it is ... and it was VERY tasty... every one ate the whole thing which is a good sign :) Next time I will be cooking North African Meat balls... so stay tuned :) JAR
